Yes, this was my first attempt. I have been interested in it for awhile, and finally got around to it last November during Thanksgiving. It's really simple, but an expensive brew. It was my first brew, too, and initial investment in brewing gets pricey. I bought two 3 gallon carboys, a siphon, hydrometer and an airlock.
After those, the honey is those most expensive. It's a three gallon brew, so about 12lbs of honey. I also threw an orange in, as well as raisins (good for the yeast), cinnamon, and a few cloves. Maybe some allspice too, can't remember. I just used regular wine yeast.
Anyways it takes awhile to ferment and you have to rack it (siphoning off the mead from sediment/dead-yeast at the bottom) every once in a while, which is some work since you have to be careful with sanitation. I racked four times, measuring the specific gravity at each rack. I used bentonite to give it that fantastic clarity.
If I did it right, it should be 13.6% alcohol, and it tastes that strong as well.
I bottled it now, where it needs a little longer to age.
I definitely want to do it again, but I got 12 bottles out of that, so I have enough mead for awhile, haha. I'd like to try some beer brews next, I think.
