I guess I like my eggs overcooked because those look undercooked to me!

This is probably my favorite way to scramble eggs. It must have a good amount of cream cheese or creme fraisch though (you can sub sour cream or yogurt). It's just rich and creamy and so awesome with toast.

Just don't burn the toast!

You really don't need much cheese or creme fraiche in my experience. I honestly rarely use any. Just be careful and pay attention and it'll be fine.

Salmon, microgreens, and a good hot sauce.

I like to add a little salmon or baked prosciutto and top it with some mustard/broccoli microgreens. Drizzle some balsamic reduction around the plate if you're feeling extra fancy.
